Traditional fish sauce is a dark brown salty sauce made from fermented anchovies and salt. This condiment is a necessity to Thai Kitchen while it has also been widely used in other Southeast Asian cuisines. It gives the signature umami and savoury taste of Southeast Asian dishes.
The group of substances that gives rise to umami taste is glutamates in foods. Glutamates stimulate our taste receptors and strengthen the ability of our brain to sense flavor-contributing substances in a food. The resulting brothy and meaty savory taste is described as umami. Natural glutamates exist not only in animal foods but also in certain plant-based foods, such as tomatoes, mushrooms and fermented soybeans. Vegan fish sauce basically contains these ingredients extracted from plant-based foods and other herbs to produce the umami taste.
