White Miso Vegetable Stir Fry with Soya Mince by Sincerely Aline
This is a simple, quick stir fry that’s nourishing and super comforting. The protein used is rehydrated soya mince, stir fried with a tonne of fresh vegetables. The white miso gives the dish its delicious umami flavour. This dish goes very well served with steamed rice.
Start by preparing the soya mince by putting in a small bowl and stir in the hot water. Leave to once side for 10-15 minutes to rehydrate, remove excess water.
In a large wok, add the sunflower oil and turn the heat to medium. Add the ginger, chili and garlic, fry for a minute, then add the cauliflower. Fry for a few minutes.
Add the green beans, fry for another few minutes, then add the courgette and capsicum/ pepper. Stir, then drizzle some sesame oil, tamari (add based on your salt level preference) and mirin. Turn up the heat and fry for a minute before stirring in the soya mince
Add the full contents of the miso into the vegetables, stir thoroughly, fry at a high heat for a few more minutes. Taste and add more seasoning if needed.
Turn off the heat and stir in the spring onions, and serve.
